The Nutrition Assistant, under the supervision of a licensed nurse, provides the direct care of assisting long term care residents to eat. The role and responsibilities of the nutrition assistant as outlined by the Kansas Department of Health and Environment will be covered. Current issues related to the effects of nutritional status on a person’s overall health are discussed throughout the course. The use of nutritional diet therapy to treat many of the major chronic health conditions is emphasized.
