HCA 212 - Advanced Food Theory and Garde Manger

 Students will demonstrate the ability to prepare foods in the cold kitchen. Foods prepared include: salads and dressings, charcuterie, hors d’ oeuvres, appetizers, platter presentations, and sandwiches.
